Xylitol is extracted from the bark of birch trees. I occur naturally in some fruits and vegetables. It is produced, also in our body in small amounts, about 15 g per day. Xylitol is considerably sweeter than traditonal white sugar, so it should be used in smaller quantities. It shows versatility in culinary use. It is recommended primarily for baked goods, desserts, pancakes and hot and cold drinks.
