Corn flour is produced by grinding mature corn kernels that have been previously dried. It is a source of vitamins: thiamine and pyridoxine, as well as minerals: iron, magnesium, and zinc. This makes corn flour an excellent component of a healthy and balanced diet. Due to its relatively low calorie content (348 kcal/100g), it can be used as part of a weight-management diet. It is valued for its nutty flavour and for giving baked goods a yellow, distinctive colour. The flour's colour comes from carotenoids – naturally occurring antioxidant pigments. Dishes made with corn flour can be prepared as an alternative to those based on its wheat counterpart. It is primarily used as an ingredient in tortillas, rolls, muffins, and also for thickening sauces and soups.
Usage
It is recommended to mix it with other flours to avoid a grainy texture. It is important to remember that baked goods made with corn flour are more crumbly than those made with wheat flour and tend to dry out more quickly.
