The dish contains low-fat vegetable protein, a whole range of vitamins and minerals present in vegetables, as well as antioxidants: quercitin contained in onions and lutein, in which tomato paste is rich (it contains more of it than raw tomatoes). Oriental flavor and additional health-promoting properties are added by ginger root. The essential oil zingiberol is responsible for the intense aroma, while resinous substances such as gingerol and zinferon give a slightly burning, bitter taste.
