Goose lard (lard from saddle fat), due to its high content (more than 2/3) of EFAs - essential fatty acids, is among the healthier animal fats. Monounsaturated oleic acid predominates here (as in olive oil), the consumption of which is recommended for the prevention of atherosclerosis. Its properties are well known; m.in. lowers the level of bad cholesterol (LDL) without reducing the level of good cholesterol (HDL).
