Raspberry fruits are very delicate, so in a jar of raspberry jam you will find fragments of fruit, which with syrup form a homogeneous whole. The high sugar content allows to bring out the distinct raspberry color and natural aroma of the fruit. The sugar gives the jam a beautiful glassy color and prevents the contents of the jar from spoiling. Thus, the opened jam can be stored for a long time. A touch of glucose syrup protects the jam from saccharification. Following the advice from Maria Ochorowicz Monatowa's cookbook from the early 20th century, we add a little of this syrup to the jam.
We can serve the jam as an addition to bread, cottage cheese, yogurt, porridge, pudding, pancakes, pancakes, crumpets, omelets, ice cream. It works well in all kinds of baked goods, because it does not contain gelling agents, which break down when exposed to high temperatures and thus release water. Therefore, it can be used as a filling for shortcrust, French, yeast cakes.
