Description
Pai Mu Tan is one of the most classic as well as the best white teas. It originates from Fujian, a southeastern province of China. Pai Mu Tan is a blend of young leaves and buds of the da bai bush, as well as shui xian bai. It is harvested in early spring - in March and April - and the task requires great care - care must be taken not to damage the delicate tea branches. The name Pai Mu Tan, or White Peony, comes from the resemblance of the blend's buds and leaves to this popular flower.

Method of preparation
Pai Mu Tan is a good option for those who are new to the world of teas - it is easy to prepare and does not require such strict guidelines as other types of tea. White Peony even allows you to experiment with both water temperature and brewing time. The only important thing is not to pour boiling water over the leaves and buds, but water at a temperature of 70-90*C. For a 200ml cup, 1-2 teaspoons of Pai Mu Tan leaves are recommended. The brewing time should be adjusted to individual preferences: 1-7 minutes - depending on how strong an infusion you want. Then strain the leaves and the bud and enjoy a cup of excellent tea.
