Maple syrup is made by evaporating the sap of the maple trunk. It is Type A, the Dark Robust variety, which gets its name from its dark amber color. The taste of Dark Robust syrup is intense, slightly burnt. It goes perfectly with American pancakes as well as with ice cream. As a base for a marinade it will give distinctiveness to meats and fish.
