In the jam from forest blackberries, we managed to preserve whole fruits and their fragments in a thick syrup. The high sugar content allows us to bring out the intense color and characteristic flavor of forest blackberries. The sugar gives the jam a beautiful glassy color and prevents the contents of the jar from spoiling. Thus, the opened jam can be stored for a long time.
A touch of glucose syrup protects the jam from saccharification. Following the advice from Maria Ochorowicz Monatova's cookbook from the early 20th century, we add a little of this syrup to the jam.
Blackberry jam looks phenomenal at the bottom of a café latte cup enriching the taste of the coffee itself. We can serve it as an addition to bread, cottage cheese, yogurt, cereal, pudding, pancakes, pancakes, pancakes, omelets, ice cream.
