DESCRIPTION
Perz is a very common plant that grows in wastelands and clearings. Its rhizomes contain starch and are very nutritious. High in potassium and iron.
Only light, thick and fleshy rhizomes, thoroughly cleaned and dried, are selected for flour.
Flour from perch is characterized by a slightly sweet, nutty flavor. It is also characterized by a high content of dietary fiber.
METHOD OF PREPARATION
You can use perzu flour as a refining addition to wheat flour (in the proportion of 2/3 wheat flour and 1/3 perzu flour) and bake bread, rolls, cookies and other products.
It can also be used in all dishes where wheat flour is normally added, e.g. as an addition to pasta, egg omelets, potato pancakes (by adding 1/3 perzu flour to 2/3 grated potatoes).
