Apricot jam 320 g - Krokus

apricots, sugar, glucose syrup (3.5%) - prevents saccharification.

Made with 50 g of fruit per 100 g of product.
Apricot fruits are quite large, so we cut them into smaller pieces to make the jam more spreadable. The sugar gives the jam a beautiful glazed color and preserves the sunny color of the fruit, and prevents spoilage of the contents of the jar. Thus, the opened jam can be stored for a long time.
A touch of glucose syrup protects the jam from saccharification. Following the advice from Maria Ochorowicz Monatova's cookbook from the early 20th century, we add a little of this syrup to the jam.
Apricot jam mixed with milk is a wonderful thick cocktail. We can serve it, as an addition to toast, bread, cottage cheese, yogurt, porridge, pudding, pancakes, pancakes, crumpets, omelets, ice cream. It works well in all kinds of baked goods, because it does not contain gelling agents, which break down when exposed to high temperatures and thus release water. Therefore, it can be used as a filling for shortcrust, French and yeast cakes, for layering cakes (e.g. Sacher cake, Viennese pineapple cake).
